My favorite cookie in the collection is the Bordeaux, a crisp, textured cookie that melts in your mouth. But really all the cookies are pretty good. The Chocolate Pirouette is a rolled crepe cookie flecked with chocolate. The Brussels is a very crispy, almost fried tasting cookie with a layer of chocolate. The Lido is easily confused with a Tahitian (coconut cookie) but doesn't have any coconut; it's a denser slightly softer cookie. The Geneva is a pecan cookie with chocolate and pecans on one side. The Lisbon is like a chocolate chip cookie dipped in chocolate. The Milano is a classic with cookie biscuit with a layer of dark chocolate in between. Chessman are you typical butter cookies. And Orleans are very similar to Milanos but circular and thinner.
