Frozen Friday: Stouffer's - Farmers' Harvest Vegetable Lasagna

Stouffer's Farmer's Harvest Vegetable Lasagna is a frozen meal made with whole grain lasagna, layered with carrots, spinach, broccoli, onions, and a parmesan and romano cheese sauce.

A 10.5-ounce box retails for $4.19 at one of my local supermarkets.

I have to say, I prefer my Lasagna more traditional with tomato sauce. The way they do it here is a bit plain with a lightly cheesy creamy sauce (I wouldn't say either parmesan or romano cheeses were strong in this dish) paired with the more muted flavors of vegetables.

There are certain vegetarian dishes that work well and provide a good variety of flavors, and then, there are vegetarian dishes that make me yearn for some meat (or at least more seasoning). Stouffer's Farmer's Harvest Vegetable Lasagna definitely falls in the latter. There's just not enough going on in the flavor department for me. I'd rather just eat the vegetables alone, steamed or grilled with some olive oil and sprinkled with parmesan.

I did like the whole grain pasta. Whole grain pastas usually turn out just as well as the normal stuff, but with the added benefit of whole grains.

Overall, Stouffer's Farmer's Harvest Vegetable Lasagna isn't something I'd get again. There are just better options out there for the non-meat eating set (or occasional meatless eaters) that are either more flavorful or more healthy or both.
