I can't speak to the authenticity of the dish as red beans and rice isn't a common dish here in California and I've never had it anywhere else. I can say that Popeyes' version is pretty good though.
The beans were earthy, like a bean stew with a meaty smokiness to it that I would guess came from either smoked sausage or ham.

The only reason I ever go to Popeyes is to get the side orders of beans and rice. Their spicy chicken is really tatsy as well, but you have to get the beans and rice to complete the experience.
