Frozen Friday: Trader Joe's - Danish Pancakes

Trader Joe's Danish Pancakes (aka aebleskivers) are basically pancake balls. They're typically made in a special pan that looks a bit like a cast iron round muffin tin but with hemispherical indentations.

A 19.5-ounce bag of frozen pancakes sells for $3.49.

These are easy enough to make; you can just microwave them, but then they're really soft. I prefer to microwave them for 30 seconds or so and then finish them in a toaster oven for a little bit of a crust. You can also roll them around in a pan on the stove if you don't have an oven.

The end result is a fluffy ball of pancake dough with a bit of slightly crispy crust here and there. Tearing one open, I noticed a bit of a spiced aroma. Reading the ingredients, I found out there's some cardamom and lemon added for flavor. I didn't notice the lemon so much and wouldn't have guessed it was there if I hadn't read the ingredients.

Like regular pancakes, these are a bit plain alone. So I gussied them up a bit with powdered sugar and fresh blueberries:

The result is pretty good! Like pancakes but with more of the fluffy crumb and just some slight crispiness to some of the crust. They don't quite taste right out of the pan, but they're pretty close.

These are definitely worth a try if you like pancakes, especially super fluffy ones.
