The bag notes that these are "sliced from real potatoes," as opposed to formed from rehydrated potatoes and various flours a la Pringles.
Interestingly, the bag notes that these are manufactured for Ruffles by Calbee, best known for making Shrimp Flavored Chips.
So do these taste like French fries or like chips? More like the former, if you fried them slowly until any and all moisture was gone. They have a light and airy, but crunchy texture to them. It reminds me a little of In-N-Out Extra-Well Done Fries, where they're almost like matchsticks.
Taste-wise, they're very much like Cheddar & Sour Creme Ruffles minus the sour cream.
Overall, Ruffles Cheese-flavored Crispy Fries are pretty good, especially if you like cheddar-flavored chips and you want an airy almost-honeycombed crunch rather than a thin, solid crunch.
