Trader Joe's Speculoos Cookie Butter Cheesecake features a vanilla cheesecake on a Speculoos Cookie crust, topped off with a layer of smooth Speculoos Cookie Butter.

Oddly, the thin layer of cookie spread up top carried a stronger flavor than the thicker cookie crust crust on the bottom.
The bottom layer didn't really feel all that different from a standard crushed graham cracker crust. There was just a hint of the cinnamon spice and caramelized sweetness of a Speculoos cookie.
The top layer of spread punches it up by a factor of five though, and infuses each bite with the signature flavor.
The cheesecake has a dense but fluffy texture and a nice sweet, creamy and tangy flavor. There not much in the way of vanilla flavor but it's still quite good. There's a little bit too much of a skin at the outer edge though; I didn't find the texture of it very appealing.
Overall, Trader Joe's Speculoos Cookie Butter Cheesecake delivers on the promise of a sweet and creamy cheesecake with Speculoos flavor. It strikes a nice balance without going overboard. Although, I suppose there is a bit of feeling that you could just buy a regular cheesecake and spread the cookie spread on top yourself (then again, Trader Joe's isn't charging you more over their regular cheesecake).
