Review: Starbucks - Bacon and Gruyere Sous Vide Egg Bites

Starbucks' Bacon and Gruyere Sous Vide Egg Bites feature cage-free eggs with aged Gruyere and Monterey Jack cheeses, topped with a layer of Applewood smoked bacon and cooked in a temperature-controlled water bath after vacuum sealing.

I paid $4.45 for a pair of Egg Bites.

The pictures that I had seen advertising the Sous Vide Egg Bites and the item's name itself made me think that these were much smaller than they actually are. These won't fill you up by any means, but it's great if you prefer a lighter breakfast that's protein-focused.

These Bacon and Gruyere Sous Vide Egg Bites are not exactly pretty to look at, what with the pale, non-crispy bacon sitting on the top. They're also oily to the touch, which is expected from the high fat content from the cheese and bacon, so you definitely need a napkin.

Texture-wise, these are similar to a custard but just a little spongier so that it resembles a dense, firmly-set souffle. The texture also calls to mind rare cheesecakes (also known as "no-bake" cheesecakes) due to the dense but soft texture. I like the texture but I can see how it might be off-putting for some.

These particular Egg Bites are very cheese-forward, prominently featuring a heavy Gruyere flavor and with only a touch of egg-y taste. The bacon was smoky and appropriately salty, but not at all crispy due to the cooking method. The Egg Bites taste more like Cheese Bites, which is as delicious as it sounds.

Overall, I enjoyed the  Bacon and Gruyere Sous Vide Egg Bites a lot more than I expected to. They're delicious and well-executed, although quite pricey for what you get. I wouldn't get them on a regular basis but they're a nice, cheesy, crustless quiche substitute for when I'm feeling like brunch any time of day.
