It's a protein-heavy, gluten-free option that tacks on a $3.00 extra charge to your pizza when you order it. I should note that it's 7-inches versus the regular 11.5-inches of their other crust options (which is to say you're paying more for less toppings).
With the tomato sauce and cheese that I went with, it ended up feeling a bit like chicken parmesan but firmer due to the density. The pepperoni cupped and crisped up pretty nicely but was rather mild in flavor and didn't accomplish much in detracting from the chicken parmesan feeling.
Overall, I enjoyed Pieology's Protein Style Chicken Base well enough as a pizza-ish dish that's quite filling despite its smaller size. The chicken crust is nice if you're looking to cut carbs or eat somewhat gluten-free (it's still a pizzeria with flour in the air) and I like it better than any typical gluten-free crust or cauliflower crust that I've tried.
