Chipotle to Test New Cilantro-Lime Cauliflower Rice in Denver and Wisconsin

Starting July 15, 2020, Chipotle will test new Cilantro-Lime Cauliflower Rice at 55 restaurants in Denver and throughout Wisconsin.

The new plant-based option features grilled cauliflower seasoned with chopped cilantro, lime juice, and salt. It fits keto, Whole30, paleo, vegan, and vegetarian diets and can be substituted in place of white or brown rice for an extra $2.

According to the chain's Chief Marketing Officer, "one out of three new menu item requests from Chipotle customers is for cauliflower rice."
