A 9-oz package was $2.99 on sale (which is the lowest I've ever seen them go for).
I usually would prepare this in the microwave but the box also included air fryer instructions so I went with that.
Out of the air fryer there was a good amount of browning that, fortunately, did not veer into burnt territory. It added some crunch as well as some toasted cheese notes.
Unfortunately, the tomatillo sauce, which was pretty much a salsa verde (i.e. green sauce) separated so that there was a pool of clear liquid along the bottom of the bowl. It probably didn't help that, unlike a corn tortilla, the chicken shell didn't really catch or absorb much of the sauce. The texture wasn't great but the sauce contributed the fresh, tangy taste of tomatillos along with a bit of spicy heat from jalapeƱos.
The chicken-and-cheese shell was made with a combination of chicken, parmesan, water, oil, and salt to give the frozen meal a low-carb/keto-friendly profile (6g net carbs [9g carbs minus 3g dietary fiber] according the box). There wasn't much flavor to it and it felt like smooth deli meat. Inside was seasoned chicken and very mild Monterey Jack cheese. There wasn't much of a cheese pull to be found.
Overall, Real Good Foods Chicken Enchiladas turned out decently in terms of taste and texture. It's quite simple on both fronts as it's really just chicken, cheese, and tomatillos with a few seasonings (mostly salt but also some onion and garlic). I did find myself missing the corn tortilla as it would have supplied just a touch more complexity to the meal. I'm not sure this would quell an enchilada craving for me but it would probably pass if you were doing a low-carb/keto diet or wanted a protein-laden frozen meal.
