Popeyes describes the flavor of its Honey Lemon Pepper sauce as a "sweet and tangy lemon flavor" with "a touch of black pepper heat."
As I mentioned in my review of the Classic Boneless Wings, the chicken was moist and meaty with a good thickness and the crust was crispy and flaky with a very nice even shell surrounding the meat (i.e. no bare spots).
The Honey Lemon Pepper sauce offered a surprisingly strong note of lemon zest paired with a moderate sweetness. Additionally, it had a light lemony tang and mild heat. It was somewhat reminiscent of lemon chicken from a Chinese-American takeout restaurant but delivered a more lemony flavor with a slight kick. The consistency of the sauce was thin but sticky. It clung moderately well to the chicken.
Moreover, the chicken breading held up very well against the sauce and was still crispy even when it cooled. I saved a few pieces to heat up the next day in the air fryer and they turned out crispy even with the sauce (just be careful of burning the sauce if you reheat them).
The bottom line is that Popeyes Honey Lemon Pepper Boneless Wings came out exceptionally well with a novel and tasty flavor and great texture.
